Join us on 21/3 for a delicious tasting event about cheeses from Campania Region.
During this tasting, I will briefly explain how these cheeses are created and the story behind their small and proud producers.
Cheeses come from different small villages in Campania Region, deep south of Italy.
During this journey of flavours, the cheeses will be paired with organic jams, honeys and a glass of wine for each one.

Last Saturday, 23-11, Luigi hosted us in his beautiful Souther Italian delicatessen shop Terre Lente.
The shop is located in Joordan, in the heart of Amsterdam and it is such a magical place.
40 people more or less attended the event and everyone contributed to creating the best atmosphere ever.
We were all friends, enjoying a special night out, tasting unique products and wines. All from South Italy. All from small producers with their unique stories.
Men,women, kids joined the event and we were perfectly mingled together.
On the other side of the counter, it was amazing to witness how people who didn't know each other were having such a great time together.
Thanks everyone for coming and a special thanks to Luigi to be such a professional and a great host.
The sincere laughs I experienced were definitely a gift for me.

Do you already know Irpinia? Irpinia is in Campania, where products are still made on the traditional way, by family businesses and passionate producers. This is the place where I get products from. Together with Terre Lente, one of the best Italian Delicatessens shops in Amsterdam, we organise this tasting on Saturday 23 November.
A selection of the best products, all coming from small scale producers. Cold cuts, cheese, honey, jams, extra virgin olive oil and a warm meal.
Terre Lente will serve lovely matching wines from the region.

Storage
To store cheese and keep it fresh longer, you have to follow some easy rules to preserve taste and aroma. Our suggestions will help you avoid waste and preserve the cheese as long as possible without losing its flavor. You can apply these rules to preserve all kinds of cheese.
In general we can say that the main enemies of the cheese are 4:
Drying: Without the right humidity, the cheese dries out losing all its properties
The lack of air: Cheese keeps better if it can breathe.
Too cold: alters the organoleptic properties.
Too hot: increases chance of fermentation and perishability.
Few tips:
Keep it at the right temperature to maintain product quality: Fresh cheeses should be placed in the coldest part of the fridge (2° to 4 °C), aged cheeses in the warmest part of the fridge (8° and 10°) while all the other kind of cheese in the middle part of the fridge at 6° and 8 °. The important thing is that the cheese must never suffer temperature changes.
Never use the plastic wrap that comes with it ( if vacuum-sealed):
In this way you “suffocate” the cheese preventing it from breathing. In addition, the cheese is made mostly from oils and fats that in a short time will absorb the flavor of the plastic.
Store cheese in paper: For more or less aged cheese the best solution is to keep them in food paper. The paper is porous and protects the cheese from exposure to air, but at the same time allows him to breathe. Remember to replace it every time you consume the cheese.For fresh and soft cheese you can use food paper or parchment paper and then store them in an airtight container. The paper creates a barrier between cheese and plastic and allow the cheese to breathe, the container prevent it from drying out. Fresh cheeses must be consumed in a short time. Alternatively, cover the cheese with a slightly damp cloth, very good to keep the right moisture and make the cheese breathe.
Although packaged, cheeses must not remain in contact with unwashed vegetables and legumes, as this could cause bacterial contamination.
If you see mold on the cheese:
If you see some mold on your cheese don’t worry! Just remove the first slice. If you see mold on the crust of fresh cheeses use a kitchen sponge and warm water and allow to dry at room temperature. If mold appear on the crust of ripe cheese or semi-mature, rub the crust with a little of olive oil and let dry.

Yesterday I visited the people behind our amazing Cupolini, gluten free Hazelnut biscuits produced only in the tiny village of Caposele, Irpinia, South Italy.
Only prime ingredients, only 3 ingredients: local hazelnuts - 90% produced by Massimo’s family( the owner) - eggs and sugar. Gluten free.
4 people per shift work in this small factory and they can produce, at their best, 100kg of biscuits!
The hazelnuts are collected by Massimo, he peels, roasts them and obtains grains from them. Then, the wise hands of trusted people add eggs and sugar to create the dough and create by hand, the amazing biscuits. One by one, with their hands.
This product is 100% handmade, produced in Massimo's laboratory. Massimo's produced only this product. Therefore it is also possible to guarantee that this product is totally gluten free.
Yesterday the production was full on and it was a gift for me to smell hazelnuts all over and taste the biscuits just out of the oven.
And I’m really proud to share this unique products with you.

So nice to see Chiara's Food products at the Baretto. Shipping costs from Italy are already included in the price. Our products match perfectly the concept of the Baretto, the atmosphere, the color of the packaging. This looks like a perfect marriage to me!

We were there!
Our stall was at the Kanaalpromenade Oost, right behind the canal and surrounded by other enthusiastic sellers and customers.
Our location was quite unique, there was a group of Cuban Salsa dancers singing and dancing for the whole day. What an amazing vibe!
Grazie a tutti for stopping by, for shopping, for your smiles, for your help so that I could eat something! It has been for me an exciting first time at the Sunday market, definitely not the last one!

We are so thrilled about the idea of being on the other side. I've always been there as a customer, admiring the hard work of people showing their products, their passion, sharing interests and smiles.
I always loved to see how many different people, families, nationalities, ages mingle together in one and spend yet another amazing day in Amsterdam.
This time I will be there and I will be pleased to have you tasting some of my best products: extra virgin olive oil, apricot jam, plums jam, orange ja, honey, taralli, salsiccia, hazelnuts cookies, chocolate..
all the products come from South Italy, from small producers who put their heart into what they do... from good people to good people..

What is really nice about my job is also to have the chance to meet amazing and creative people, and with a lot to share with.
Both Merel de Haan and I care about finding ways to reduce waste and plastic usage and how we can all give our daily contribution.
She then created for Chiara's Food handmade cotton bags to use for your groceries! But her art goes beyond.

Our caciocavallo: comes from Basilicata region and it is aged for 90 days
Do you know where this cheese takes its name from?
It gets it from the manner in which it is always tied together in a rope and dangled over a wooden board to drain and age.
It is a 'pasta filata cheese' made out of cow's milk, produced mainly throughout Southern Italy, still without the use of technology.
The Caciocavallo we chose for you ages 90 days and it comes from Basilicata Region, from a little village called Ruoti.
We will soon meet the producer and, in that occasion, we will provide you with more details about production and origin. Stay tuned!

Cold cuts in Irpinia: an old school tradition
Our cold cuts producer, Vito, has been running his family business for decades. Vito comes from a family of self-made farmers with a passion for genuine and high quality produce.
In the late 1960s, Vito’s great grandfather, Mario, sells his home-grown grains to the village butcher, who in turn feeds these to his livestock. Inspired by this sale and interaction, Mario decides to make a business of his passion, by opening Salumificio Tornillo in 1970.
In Vito's own words: "I have been living and breathing this profession and passion my whole life, and cannot imagine doing anything different.”
Their livestock is still bought from small local producers, honouring the original farm-to-table tradition. You can feel their devotion in every bite!
Tornillo family works only with local livestock, coming every week from Campania, Basilicata and Apulia regions.
Every phase is attentively processed in their factory: drying (6-7 days),aging and filling only using natural bowels.
Every product has a different aging: salsiccia minimum 3 weeks, guanciale and pancetta for at least 2 months.
