It is a classic wine, an ancient classic a few are. No chemistry, just grapes. A small Sangiovese berry from a silty soil that gives a lot of satisfaction.
Grapes: Sangiovese from silty soils with 300 MSL and small quantities of other Tuscan Wines.
Harvesting: October, full phenolic maturation. Manual in cassettes. Spontaneous fermentation in cement or steel tanks. Maturation: 3-6 months steel barrels.
Aging: 2-14 months bottle. Not filtered or clarified.
