This type of rice is very versatile and stays intact while cooking, but needs to be served 'al dente'. Its grains are big and resistant. This is also a good rice to make risotti but also amazing for arancini ( rice balls) or rice soups.
Can also be used - during summer - to prepare rice salads.
Tip: toast for a couple of minutes the rice with the extra virgin olive oil and onion before starting to add your bouillon. This will help the grains to stay intact.
