From Sicily

Timilia - also known as Tumminia - is yet another old wheat that Sicily brought back to life. It is rich in oligoelements, poliphenols and with a low gluten percentage. It has a high percentage of proteins. 

Seeds are planted in March and collected in June. 

Usage: ideal for special breads or pasta. 

IMPORTANT: We highly recommend to extend the rising phase and, if possible, to use a starter. This is the perfect combination to make the 'old wheat' do its best job.
