After fermentation in steel, the wine remains in the amphora for about a year and, after a few months in the bottle, it is ready to be tasted. The floral and delicately fruity scents of the first year of life already reveal the coveted mineral fabric (...what a tricky term ). Evolution follows the path we have traced: in our wines we look for a vibrant, crunchy and long-lasting vitality. One sip must ask for another.
Try it with asparagus and egg, dandelion salad, cereal soups, pea or broad bean soup, nettle risotto. Excellent with grilled fish and seafood first courses or as an accompaniment to fresh cheeses such as robiola. Incredible how it goes well with rabbit all'Arneis, chicken all'Arneis and also guinea fowl all'Arneis, prawns all'Arneis, squid all'Arneis.
