SPINOSO is our classic method sparkling wine, the only Rabel wine not obtained from a single variety: in fact, there are three native Piedmontese vines from which it is born.

We harvested each grape variety at separate times with attention to the right balance between potential alcohol and acidity. The grapes are stored in the cell at 0 °C until pressing to accentuate the transfer of the aromatic precursors from the skins to the pulp, then the very cold grapes are pressed in whole bunches.
We then ferment the free-run must in steel and, after fermentation, approximately 70% of the base wine remains in steel, while 30% is refined in 60 liter casks (of the zibibbo type) until the following spring.

One of these small barrels has constituted, since 2016, Spinoso's perpetual cuvée, obtained with the Solera method: half is used every year in second fermentation and replaced by the vintage wine.

Our Spinoso rests on the yeasts for about 40 months and at least six in the bottle post disgorgement before sale, while the dosage is zero: we like it just like that, Spinoso, and we don't want to give it any artificial roundness.

Rabel's idea for his first classic method is to evolve in the bottle a wine that combines the verticality of the sparkling wine base vinified in steel (in a reductive environment) with the complexity of the base refined in small wood and of the perpetual cuvées with the Solera (oxidative environment) to obtain a scratchy but evolved sparkling wine.

There is no suggested pairing here: for us the bubble goes well with everything.
