IDENTITY AND VISION | About Giuseppe Cipolla

The desire to express myself and my freedom leaded to me on producing wine in C.da Passofonduto, located above a hill around Platani river. A long walk lasting for 10 years: a preparatory path using my bare hands into the ground where I experimented emotions, mixtures, vinifications, they leaded to plant grapevine searching for the perfect harmony between environment, soil, raising, grape variety and man.

Underground field of sedimentary calcareous – clayey rocks rich in sulfur

Selection of 90% Grillo and Catarratto grapes and other 10% native white grapes varieties of Passofonduto and Torre del Salto d’Angio’ district, assembled to offer a global idea about the territory. Grapes are destemmed and fermented in small wine vessels with maceration on the skins for one day.

Food pairing: asparagus, seafood, chicken, risotto, vegetables.
