Sourdough toastie with mushrooms, wild fennel pesto & grilled red peppers

Today we want to share the ultimate toasty lust because yes.. we’re officially addicted. And good things need to be shared.

We took two thick slices of sourdough, slathered the outsides with mayo, and went wild inside with our wild fennel pesto.

This Sicilian pesto from @fratelliburgio is punchy, slightly sweet, with that umami kick that makes everything aligned.

Inside? Melty layers of gruyère, mozzarella, and sharp British cheddar. We piled on sautéed mushrooms, spinach, and our roasted pepper strips for that sweet, smoky sweet touch. Pressed it golden in a hot pan with a pot and a can to add some weight.

Pair it with a fresh arugula salad, juicy tomatoes, pine nuts, and an EVO balsamic drizzle.

In the Netherlands a good toasty is one of the reasons to be happy and a top lunch pick.

⁉️ You might ask yourself.. how else to use the wild fennel pesto? You could actually throw it into anything—pasta (like our last recipe!), sandwiches, or straight-up spooning it…
