Miscazze' is obtained by the cultivars Siracusana (50%), Biancolilla (20%), Nocellara (20%), Tonda Iblea (10%)
Tenuta Cavasecca EVOO is extracted only from the olives produced by the farm, in full compliance with the methods provided by the organic farming regimen. Firrisa is obtained by their Tonda Iblea trees. The olive harvest begins in mid-September. The olives are hand picked in order to minimize the risk of olive damage. The olives are then milled within 6 hours of collection through a cold extraction system. Then the EVOO is stored with the usage of nitrogen and at controlled temperature.
This EVOO has a medium-intense fruitiness. The bitterness and spiciness hints are perfectly balanced. The aroma of green tomato and artichokes make this blend more suitable for palates who prefer a strong and intense taste.
