The bergamots used for this product are Sicilian and have the peculiarity of containing less essential oils and of being less bitter. Less suitable for the perfume industry, perfect for going to meet our lavender, Sicilian as well.
The union between the two ingredients is a jam with very intense aromas, which uses a powerful olfactory impact to start giving a pleasure that lasts on the palate. Its freshness alternates with a delicate bitter note, in a dynamic game that makes it the perfect companion to fish and shellfish, for example to give thrust and lightness to fresh grilled tuna, or grilled dolphin fish or other blue fish of the Mediterranean culinary tradition and not only. Goat cheeses, in different stages of maturation, are also a splendid base on which to play for stimulating combinations.
