Sweet and sour onion relish, 70% onion with demerara sugar and lemon: serve it with aged cheese or cold cuts.
Made by Fratelli Burgio, whose family deli dates from 1978, when it opened in the countryside of Solarino; today it is in the Ortigia market in Siracusa. They cook the old way, without preservatives.

- With cheese, especially aged ones.
