Ingredients:
- 100 gr of bulgur
- 1 big zucchini
- ⅓ leek
- Plenty of fresh mint
- A jar of ‘Mackerel filets’
- White sesame seeds
In a pot add the bulgur and double the amount of the water. Bring it to a boil and then lower to heat to minimum. Cook until the water is absorbed.
In the meantime, clean the zucchini and cut it in small cubes. Clean the leek and cut it as thin as possible. Warm up 2 spoons of olive oil in a pan and add the leek. Cook for 5 minutes and then add the zucchini cubes. Season with some salt and pepper to your liking. Cook on medium heat for 15 minutes while stirring once in a while. Towards the end, add the mint chopped in smaller pieces.
Compose your dish. Place the bulgur at the bottom, add the zucchini, break the mackerel in smaller pieces and add it on top. Finally add some sesame seeds, some extra fresh mint and olive oil. Enjoy!
