Ingredients:
- 150 gr flour (Risciola 1)
- 50 gr hazelnut flour
- 100 gr butter (cut in cubes and cold from the fridge)
- 100 gr sugar
- 2 egg yolks
- A pinch of salt
- Peel of a lemon
- 3 eggs
- 150 gr sugar
- 150 gr butter
- 2 full spoons of maizena
- Zest of two oranges
- Juice of half orange
- Dark chocolate
Start making the dough. Mix the flours and the butter, add the sugar and the egg yolks, the salt and the lemon peel. Work everything together on your counter until you get a smooth and homogeneous dough. Cover it in cling film and put it in the fridge for about 30 minutes.
10 minutes before the dough will be ready, start making the orange cream. Melt the butter on low fire. Whisk the eggs and the sugar until creamy. Add the orange zest and the orange juice, keep whisking. Add the maizena and finally the butter while it is still warm.
Roll out the dough and place into your pie mold. Pour the orange filling into it and bake it in a preheated oven (180°C) for about 30 minutes. Use the lower rack.
Once cooked, let it cool down, remove it from the mold and sprinkle the top with your favourite dark chocolate.
