Orange soft biscuits

Let the butter at room temperature for a few minutes and then cut it in small pieces. Then, in a bowl, mix the butter with the sugar using a fork. Add the egg, the peel of the orange and the juice of half of the orange. Keep on mixing and add slowly the flour and the baking powder previously sieved. Continue mixing with your hands until it becomes soft and homogeneous. Cover the bowl with cling film and leave it in the fridge for about an hour. After that, form small balls and roll them first in normal sugar and then in powder sugar. Finally, cook your biscuits in a preheated oven at 180 °C for 10 min. Once they are ready, let them settle down for a few minutes. Keep them in a closed and dry container so that they remain soft on the inside and crunchy on the outside.
