Pappardelle with Arugula Pesto and Dutch Lake Shrimps
Ingredients:
- 200 gr pappardelle
- Half of an onion
- 20 gr butter
- 120 gr arugula pesto
- Half lemon
- 100 gr dutch lake shrimps
Instructions:

In a large pot, add water and cook on high heat.

Cut thin slices of onion and cook it in a pan with the butter at low heat until it gets soft.

Raise the fire and cook the shrimps for about 2 minutes and keep on stirring. Add the juice of half a lemon and stir properly. As soon as the water boils, add 2 tablespoons of salt and stir to let it dissolve.

Add pasta and cook for about 10 minutes (check the cooking time on the bag of your pasta).

When ready, drain it and add it to the sauce. Only at this point, add the arugula pesto and stir in order to mix all the ingredients.

Add some cooking water if it is too dry. Enjoy warm
