RÖSTIS WITH MACKEREL FILETS, ORANGE AND PARMESAN CHIPS (x3)

RÖSTIS WITH MACKEREL FILETS, ORANGE AND PARMESAN CHIPS (x3)

Ingredients:


Peel the potato and grate it with a grater with big holes. Squeeze all the water out of the grated potato. Add the cheese, some chopped fresh chives, a pinch of salt, a spoon of olive oil and some pepper to your liking. Use a spoon to mix everything together. The best way to shape a rosti would be to use a pasta cutter, fill it with the mix up to 2 cm and press it down to squeeze everything together. If you don't have a pasta cutter, just use your hands to shape the mix into three round and flat-tish röstis. Take a flat pan and add two spoons of olive oil. When the oil is warm, add the röstis, being careful because they might be a little fragile. Bake them on each side for about 3 minutes or until nice and gold.

In the meantime, use a very sharp knife to remove the peel of the orange and try to get nice wedges. Cut the Parmesan cheese in thin chips and break the mackerel filets into smaller pieces. When all the ingredients are ready, start composing your dish. Add the röstis to a plate, top them with the mackerel, the Parmesan chips and the orange wedges. Grind some pepper on top and add some sweet paprika powder to finish the dish.
