- 2 slices of your favorite bread
- 2 spoons or ‘Artichokes & almonds spread’
- 2 slices of wild salmon (or any type of smoked salmon you like)
- Half eggplant or seasoned Sicilian eggplants
- Garlic or garlic spread
- Fresh parsley
- Olive oil, salt and pepper
- Fresh salad
The only thing you need to do for this recipe is cook the eggplant. If you don't have time for that, we got you covered with our Seasoned sicilian eggplants.
Slice it for its length, 2 mm thin. For your sandwich you will need 2 or 3 slices. Take a large pan and warm up 2 spoons of olive oil. Add the eggplant slices, season with some salt and pepper to your liking. Cook them on each side for about a minute or two. They need to get a little brown but not burnt. In the meantime, chop half a garlic clove very thinly and chop the parsley too. Mix them together and add a little of olive oil. Add this condiment to the eggplant once they are cooked.
To compose your sandwich, start from the bread. Cut 2 thick slices of it and toast them a little if you like. Add the artichokes spread, the salmon, the eggplant and some greens. A pinch of salt, a grind of pepper and a little olive oil on top and you are ready to go. Enjoy!
