Smoked tofu with Sicilian green olives spread

SMOKED TOFU WITH SICILIAN GREEN OKIVES SPREAD

Ingredients:
- 200 gr smoked tofu
- 1 garlic clove
- Fresh rosemary
- A small piece of ginger, cut in small pieces
- Half a teaspoon of miso paste
- 10 cherry tomatoes, cut in quarters
- 2 teaspoons of “green olives spread’
- Half cucumber
- A small piece of ginger, cut in small pieces
- Juice of half a lemon
- 4/5 spoons of oat milk

Start with the cucumber sauce. Cut the half cucumber into small pieces and blend it together with the ginger, the lemon juice and the oat milk. If the sauce is too thick add another spoon of milk. Let it rest in the fridge.
Use a pan and warm up 2 spoons of olive oil. Add the garlic clove, the rosemary and the fresh ginger. Cook on medium heat for about 5 minutes, then add the miso paste and stir it in. Add 2 spoons of warm water and let the miso dissolve completely. When the water is all absorbed, add the cherry tomatoes and higher the heat. Cook for another 5 minutes while stirring continuously. Remove the cherry tomatoes and add the tofu (just break it with your hands and let it fall in the pan). Cook on medium heat for about 5 minutes, then add the green olives spread and mix it in. Finally remove the garlic and the rosemary.
When all the parts are ready you can compose your dish. Use a round cookie/pasta cutter and place it in the middle of a bowl. Add the tofu mix (the amount is enough for 4 portions) and press it down using a spoon. Add a few cherry tomatoes on top and pour the cucumber sauce all around. E
