- 250 gr white beans
- 1 small white onion
- 1 garlic clove
- Fresh herbs: sage, rosemary, thyme, oregano
- Extra Virgin Olive oil, salt and pepper
Instructions:
Wash the white beans under running water and soak them in room temperature water for about 12 hours. Change the water at least one time .
After 12 hours, rinse the beans under running water and drain them.
Dice the onion, add two spoons of Extra Virgin Olive oil in a pot and cook it at low heat.
Chop thinly the fresh herbs (except the sage) and add them to the onion.
Stir frequently and cook for about 5 minutes. Add the white beans, cover with warm water.
Add salt and pepper and cook for about 50 minutes or until the beans are completely cooked. Remove the sage and smash your soup with a hand mixer until smooth.
Add extra salt and pepper. Serve warm with some croutons.
Tips:
Slice some guanciale and put in the oven until it is crunchy and add it on top for some extra flavour!
