Corn with smoked extra virgin olive oil
Ingredients:
- 2 corn cobs, each cut in 4 pieces
- 6 red medium size tomatoes
- 15 gr fresh basil
- 15 gr fresh parsley
- 1 teaspoon of lemon jam
- 2 garlic clove
- Smoked extra virgin olive oil
- Olive oil, salt and pepper
Cut the tomatoes in little cubes and let them drain inside a sieve for about 10 minutes. Chop one garlic clove together with 5 gr of parsley, then add it to the tomatoes together with 2 tablespoons of olive oil. Season the tomatoes with some salt and pepper to your liking.
Blend the rest of the parsley together with the basil, the second garlic clove, the lemon jam and 2 spoons of olive oil. Add a pinch of salt at the end and stir it in. Warm up 2 tablespoons of olive oil in a pan. When hot, add the corn and cook it on each side. At the end add some salt and sprinkle with a few drops of the smoked extra virgin olive oil.
When all the parts are ready, plate your dish. First add the green sauce to the plate, then the tomatoes and finally the corn. Add some extra smoked extra virgin olive oil On top and enjoy.
