DARK CHOCOLATE SPONGE CAKE WITH ORANGE JAM (X4)

Ingredients:

Melt the chocolate and the butter in a bain-marie. Use a spatula to mix the two ingredients together. Let it cool down.

In a first bowl, add the egg yolks and the sugar and beat them using an electric whisk. Whisk until creamy. In a second bowl, whisk the egg whites until stiff.

Add the chocolate and butter to the yolks and sugar cream and whisk till they are combined. Add the flour and the baking powder and whisk gently. Finally fold the egg whites in.

Use 4 cups, round molds or anything you have at home that can go into the oven. Fill the molds for ¾ and bake your sponge cakes in a preheated oven at 180C for 20/25 minutes. Once ready, let them cool down.

In the meantime, cut an orange in thin slices. Add the slices to a pan, cover them with 100 gr of sugar and cook them till all the sugar is melted (turn them once in a while).

When the sponge cakes are ready, cut them in half and fill them with a generous amount of orange jam and a slice of candied orange. Add some jam and another slice of orange also on top. Enjoy!
