Ingredients:
- 400 gr minced pork meat
- 1 egg
- 100 gr grated Parmesan cheese
- 1 slice of bread, soaked in milk and then squeezed to remove the liquid and reduced in small pieces
- Salt and pepper
- 4 mint leaves, chopped thinly
- 2 tsp of powdered cumin
- Bread crumbs
- 250 ml of tomato sauce
- 1 garlic clove
- 1 small piece of ginger
- 2 mint leaves
- 1 tbsp of ‘Almond butter’
- Salt and pepper
Start with adding all the ingredients for the meatballs in a bowl, use your hands and mix until it all looks all smooth and homogeneous. Make 6/8 meatballs out of your mixture (the number depends on how big you make the balls). Roll them, one by one, in the bread crumbs and set them on an oven tray covered with baking paper. Bake the meatballs for 30 minutes at 180°C. After 15 min turn them so that they can get evenly cooked on every side.
In the meantime, prepare the sauce. Thinly chop the garlic and the ginger. Cook them in 2 spoons of olive oil for about 4 minutes on low fire. Add the tomato sauce and a couple of mint leaves. Bring to a boil, then lower the fire, cover with a lid and cook for about 15 minutes. Finally, add the almond butter and stir it in. Cook for another 2 minutes. If the sauce does not look smooth I advise to use a blender. Add the sauce in the middle of a plate and add the meatballs on top. Some white rice is definitely a good combo. Enjoy!
