Ingredients:
- 2 salmon filet
- 100 gr sea salt with Sicilian oranges
- 100 gr white sugar
- 1 leek
- 1 orange
- 1 spring onion
Start preparing the salmon the night before. From each filet cut away the flat edges and keep the central thick part. Mix the salt and the sugar together. Put half of the mixture in a plastic container, then add the salmon on top and finally the second half of the mixture. The filets need to be completely covered in salt and sugar on every side. Close the plastic container and leave it in the fridge until the day after.
Wash the leek, cut away the bottom and the green part and slice it in half for the length. Add some olive oil and salt on top of the two halves and bake them in the oven for about 30 minutes. In the meantime, take the salmon out of the fridge. Remove the salt and sugar and quickly rinse it. Tap it dry using some kitchen paper.
Cut some orange and some spring onion.
When all the parts are ready, compose your dish. Put the salmon on the plate, add some orange and spring onion on top and put the roasted leek on its side. Enjoy!
