Ingredients:
- 200 gr spaghetti
- 1 small white onion
- 1 zucchini
- 100 gr ricotta cheese
- Fresh thyme
- 2 spoons of bread crumbs (thick milling)
- Oil, salt and pepper
Instructions:
Cut the onion in thin slices and cook them in two spoons of extra virgin olive oil on a low fire until transparent.
Cut the zucchini for its length and then slice each half as thin as possible. Add it to the onion, higher the fire and cook for about 5 minutes.
Add salt and pepper. In the meantime, fill a large pot with water and cook it on high heat.
As soon as the water boils, add 1 tablespoon of salt and stir to let it dissolve.
Add the spaghetti. When ready, mix the spaghetti with the zucchini, add the ricotta cheese, some fresh thyme leaves and two spoons of bread crumbs.
Mix all together and add a few spoons of cooking water to create a little cream.
Divide the spaghetti in two plates and enjoy it warm!
