WHOLEGRAIN CRACKERS WITH GARLIC SPREAD, PRAWNS AND TANGERINE JAM (X 4 crackers)

Ingredients:
- 67 gr wholegrain flour
- 33 gr cold butter ( to dice)
- 17 ml cold water
- 4 spoons of ‘Garlic spread’
- 4 tsp of ‘Tangerine jam’
- 12 small prawns
- Juice of half a lemon
- Chives
- 3 tsp cottage cheese
- Olive oil, salt and pepper
Instructions:
Let’s start by preparing the dough for the crackers. In a bowl mix the flour and the cold butter using the tips of your fingers. You need to get to a grainy and homogeneous structure. Then add the cold water and work your dough (on the counter) until it all gets together. Make a ball out of it, wrap it in cling film and let it rest in the fridge for about 20 minutes.
In the meantime, let’s cook the prawns. Warm up 2 spoons of olive oil in a large pan. When hot, add the prawns and cook them for about 5 minutes. Add a pinch of salt and some pepper. Stir continuously. Once ready, add the lemon juice and the chives previously cut. Let everything on the heat for 30 seconds so that the flavor all comes together.
Once the dough has rested in the fridge, take it out and use a rolling pin to roll it out to a thickness of 2/3 mm. Cut 4 rounds out of it (I used a pasta cutter but you can simply use a glass or a cup). Bake the cracker for 15 to 20 minutes at 180°C in a preheated oven.
When all the ingredients are ready, start composing your cracker. On each cracker, add one spoon of ‘Garlic spread’, 3 prawns, 1 tsp of cottage cheese, 1 tsp of ‘Tangerine jam’ and finally some fresh chives on top. Enjoy!
