Busiate, the twisted Sicilian pasta made to grip the sauce: toss it with pistachio pesto.
Pastara makes it from Russello, an ancient grain grown mainly around Trapani. The grain is milled and the pasta drawn slowly, so the surface stays rough and the flavour gentle and nutty.
