Discover the storyFor six years now, our panettone has arrived from Sicily to Amsterdam. We are the exclusive resellers of Nuova Dolceria in the Netherlands, and it is the one we do not mean to replace. It is made in Ferla, a small baroque borgo in the province of Siracusa, the city Chiara is originally from.
Nuova Dolceria started as the family business of master pastry chef Francesco Manuele, now supported by his son Salvo and a team of pastry chefs. They still work in their small original lab, with the ovens always on during production and that unmistakable scent.
Each panettone is shaped and packed one by one. The dough is raised with a 60-year-old sourdough starter, with no additives and no preservatives, and that is where the softest dough comes from: fluffy, fragrant, and so light you will want another slice. A balanced taste, not too sweet, so it works for those who prefer savoury too.

One story tells of Toni, a kitchen boy who saved a burnt dessert at the Sforza court — ‘pan de Toni’. Another tells of Ughetto degli Atellani baking sweet bread to win a baker’s daughter. These are legends, not proven origins.
In Milan, Motta shapes the high dome, adds butter, lets the dough rise three times over almost 20 hours, and wraps it in paper.
An Italian ministerial decree of 22 July 2005 defines panettone: natural sourdough, at least 16% butter, 4% egg yolk, and 20% raisins and candied citrus.
Ours is made in Ferla by Francesco Manuele, his son Salvo and their team.
02 / How it is made
A natural sourdough starter begins the dough. Long rises give it time to develop. Nuova Dolceria's lievito madre is more than 60 years old.
The traditional definition requires at least 16% butter and 4% egg yolk.
At least 20% raisins and candied citrus belong in the defined classic panettone. Check each product for its own ingredients.
