Black Pepper Pecorino Tuscany - Pecorino Pienza al Pepe Nero

Caseificio Cugusi is a family dairy in Pienza, in the Val d'Orcia hills of Tuscany, a corner of Siena famous for its pecorino and its wines. They have been making sheep's cheese here for generations.

Pecorino studded with black pepper, aromatic and lightly spicy. 300 to 350g, vacuum sealed.

Ingredients: pasteurised sheep milk, rennet, salt, black pepper, lactic enzymes.

Usage and storage: take it out of the fridge an hour or two before serving and pat it dry; never freeze it. Once opened, wrap it in food paper rather than plastic, keep it in the warmer part of the fridge, away from unwashed vegetables.
