Pecorino Romano is one of the oldest cheeses there is: Roman legionaries already carried it with them. It is pure sheep's milk, hard, sharp and salty, made to be grated. It is the cheese of cacio e pepe, and together with guanciale it makes a proper amatriciana and carbonara. This one comes from the Cooperativa Allevatori Ovini in Sardinia, which means straight from the shepherds themselves. One grating and the dish changes: this is not Parmigiano, it is bolder, saltier, with more character.

This Protected Designation of Origin cheese is produced exclusively by Cooperativa Allevatori Ovini using milk from Sardinian sheep breeds, ensuring authenticity and terroir in every bite. The 5-month minimum aging develops a distinctive sapid, intensely lactic character with subtle complexity. Its firm, eye-free paste and thin white rind make it ideal for grating over carbonara, amatriciana, and cacio e pepe, where its sharp, mineral notes elevate these classic Roman dishes. Made with thermised sheep's milk, native lactic ferments, and lamb rennet. 300g.
