Bottarga di Tonno - Grated Tuna Eggs - Fratelli Burgio - 50g

The Burgio brothers are a Sicilian family whose deli was born in 1978 in the countryside of Solarino and today sits inside the Ortigia market in Siracusa, where the stalls look out to the sea. They keep alive the flavours of the island, working the old way and without preservatives.

Bottarga di tonno is cured tuna roe, salted and naturally dried the old way until it turns dense and deeply savoury. In this grated format it is ready to use: scatter it over pasta, risotto or seafood for a briny, umami hit. A little is enough.

Ingredients: tuna fish roe, sea salt

Usage tip: its best match is pasta, with a thread of olive oil and a little of the cooking water.
