Cannelloni tubes made from Russello, an ancient Sicilian grain, to fill, cover with sauce and bake in the oven.
Pastara makes its Sicilian pasta from Russello, grown mainly around Trapani. The grain is milled and the pasta drawn slowly, which leaves a rougher surface that holds sauce and a gentle, nutty flavour.
How to use it
