Delfino Battista is an Italian house specialising in tinned fish, working anchovies, tuna and mackerel the traditional way.
100 ml. Colatura is the amber anchovy extract of the Amalfi Coast, drawn from anchovies aged under salt. A few drops give pasta, vegetables or a dressing a deep, savoury umami hit. The secret of a real spaghetti alla colatura.
