Gentile Linguine literally means 'small tongues' and is a classic Italian pasta form that is slightly wider than spaghetti.
The paste of Pastificio Gentile is trafiled by bronze dies. This gives the linguine a rough and porous surface, so that sauces stick well to the paste.
