Wholewheat tagliatelle from Russello, an old Sicilian grain: ribbons with a gentle, nutty flavour for game sauces or mushrooms.
Pastara makes its pasta from Russello, grown mainly around Trapani. The grain is milled and the pasta drawn slowly, which leaves a rougher surface that holds the sauce.
