Wide, flat tagliatelle of durum wheat from Gragnano, 10 minutes in the pot, for a ragù or tagliatelle alla bolognese.
Tagliatelle come from Emilia-Romagna, and the name comes from tagliare, to cut: the shape was traditionally cut by hand. Pastificio Gentile extrudes them through bronze, and the wide ribbon holds a rich sauce well.
