Tagliatelle of Russello grain, ribbons for richer sauces such as game ragù, mushrooms or a good tomato sauce.
Pastara works with Russello, an ancient grain grown mainly around Trapani in Sicily. The grain is milled and the pasta drawn slowly, so the surface stays rough and holds the sauce, with a gently nutty flavour.
